Key Lime Pie Smoothie Bowl

I know it’s getting colder out, but that’s not going to stop me from eating a smoothie bowl every night after dinner. I may need a hot shower afterward but it’s totally worth it. If you’re already misssing summer like I am, this Key Lime Pie Smoothie Bowl is the perfect treat! Packed with veggies and protein, it’s super nutritious and as an added bonus, totally vegan! It’s all about the toppings though, so make sure you have on hand some graham crackers and your favorite granola.

I used silken tofu in this recipe, it’s full of plantbased protein and gives the smoothie a really nice smooth, creamy texture. If you don’t like tofu, you can sub in the same amount of dairy free yogurt. (If it’s sweetened just adjust the maple syrup.) I also used some other funky ingredients in here like avocado and spinach. I buy these bags of frozen avocado at Whole Foods, but you can definitely use fresh. As for the spinach, which I despise with a passion, you can’t taste at all!

Vegan Key lime pie smoothie bowl recipe easy healthy

Ingredients:

1 frozen banana
1/2 cup silken tofu
1/4 cup avocado 
1 tbsp maple syrup (more or less to taste)
1 tsp lime juice
1 tsp lime zest
1/4 cup plantbased milk
Handful of spinach (for color – optional)

Optional toppings: granola, crushed graham crackers, sliced banana, fresh raspberries

Instructions:
Combine all ingredients in a blender and purée until smooth, adding more milk if needed. If your smoothie seems a little too liquidy, pop it in the freezer for 5-10 minutes to let it thicken up. Go crazy with toppings and enjoy!
