- 1 1/2 lbs peeled sweet potato cut into 1/4 inch strips
- 3 tbsp olive oil
- 2 tsp smoked paprika
- Salt to taste
For the Maple Tahini Sauce
- 1/2 cup tahini
- 2 tbsp lemon juice
- 1 tbsp maple syrup
- 1/2 tsp salt
- 3-5 tbsp water
Preheat the oven to 425 F (preferably convection if possible) and line two rimmed baking sheets with parchment paper.
In a large bowl, toss the sweet potato strips with oil and smoked paprika. Spread in an even layer onto both baking sheets, making sure not to overcrowd.
Bake for 15-20 minutes then use a spatula to flip the fries and return to the oven for another 15-20 minutes or until crispy and blackened on the edges. Add salt to taste and let the fries sit on the baking sheet for 10 minutes before serving to finish crisping.
To make the maple tahini sauce, blend all ingredients (except water) in a high speed blender. Add water to thin, until the sauce reaches a creamy, spreadable consistency.
