Smoky Oven Baked Sweet Potato Fries with Maple Tahini Sauce

Crispy oven baked sweet poptato fries tossed with smoked paprika and served with a creamy maple tahini dressing. Vegan, gluten free, easy to make and so addictive!

Ingredients

  • 1 1/2 lbs peeled sweet potato cut into 1/4 inch strips
  • 3 tbsp olive oil
  • 2 tsp smoked paprika
  • Salt to taste

For the Maple Tahini Sauce

  • 1/2 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp maple syrup
  • 1/2 tsp salt
  • 3-5 tbsp water

Instructions

  • Preheat the oven to 425 F (preferably convection if possible) and line two rimmed baking sheets with parchment paper.
  • In a large bowl, toss the sweet potato strips with oil and smoked paprika. Spread in an even layer onto both baking sheets, making sure not to overcrowd.
  • Bake for 15-20 minutes then use a spatula to flip the fries and return to the oven for another 15-20 minutes or until crispy and blackened on the edges. Add salt to taste and let the fries sit on the baking sheet for 10 minutes before serving to finish crisping.
  • To make the maple tahini sauce, blend all ingredients (except water) in a high speed blender. Add water to thin, until the sauce reaches a creamy, spreadable consistency.
