Vegan Chickpea Cookie Dough Bars

Ingredients

  • 1 15 oz can chickpeas drained and rinsed
  • 1 tsp baking soda
  • 1/2 cup unsweetened nut or seed butter
  • 1/3 cup brown sugar
  • 2 tbsp granulated sugar
  • 3/4 cup oat flour*
  • 1/2 tsp salt
  • 1/3 cup dairy free chocolate chips

For the topping

  • 1 cup dairy free chocolate
  • 1/4 cup unsweetened nut or seed butter

Instructions

  • Start by placing the chickpeas and baking soda in a sauce pan and covering by a few inches of water. Bring to a boil and cook for about 15 minutes or until the chickpeas have softened and their skins are falling off.
  • Lay on to a few sheets of paper towel and pick out the skins as best you can, dont worry if you dont get them all. Add the chickpeas, nut/seed butter, sugars oat flour and salt to the bowl of a food processor. Blend until very smooth and dough-like. Fold in the chocolate chips.
  • Line a loaf pan with parchment and press the dough into the bottom. I like to use a measuring cup to get an even layer. Freeze for 1 hour or until firm.
  • To make the chocolate topping, place chocolae and nut/seed butter in a microwave safe bowl. Microwave on 1 minute intervals, stirring in between until melted. Spread over the dough and return to the freezer for another 10 minutes or until the chocolate has hardened. Slice and enjoy with flaky sea salt!

Notes

*If you do not have oat flour, simply place 1 cup of rolled oats in a food processor or high speed blender and blend until finely ground.
