Vegan Apple Butter Blondies

These vegan apple butter blondies are soft and chewy with fresh apple pieces, warming spices and a crunchy crinkle top. Ready in less than 30 minutes, one bowl and crazy delicious.

Ingredients

  • 3/4 cup apple butter preferably no added sugar
  • 1/2 cup vegan butter softened
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1 large apple peeled and cut into 1/2 inch cubes
  • Granulated sugar for sprinkling

Instructions

  • Preheat the oven to 350 F and line a greased 8x8 baking dish with parchment, leaving an overhang for easy removal.
  • In a large bowl, beat together the apple butter and softened vegan butter until smooth and fluffy. Stir in brown sugar and vanilla extract. Add the flour, baking powder and spices. Mix until just combined then fold in the apple. 
  • Press into the prepared baking dish and sprinkle generously with granulated sugar. Bake for 25-32 minutes or until firm around the edges and a cake tester comes out clean. Allow to cool for at least 30 minutes before slicing.
