Spicy Almond Butter Noodles

- 6 oz udon noodles or another asian-style noodle
- 1/4 cup creamy almond butter see note
- 3 tbsp soy sauce
- 2 tbsp rice vinegar divided
- 1 tbsp freshly grated ginger
- 1 garlic clove minced
- 2 tsp honey
- 1 tsp toasted sesame oil
- 1/2 tsp red pepper flakes
To serve
- Chili crisp
- Chopped scallions
- Toasted almonds or sesame seeds
Cook the noodles according to the package instructions. Reserve about a 1/2 cup of the cooking liquid before draining and rinsing the noodles under cold water to prevent over-cooking.
While the noodles cook, make the sauce. Combine the rest of the ingredients in a small bowl and whisk until smooth.
Gently heat the sauce in pan over medium-low heat. Toss to coat the cooked noodles and thin with the reserved cooking liquid as needed.
Serve the noodles with chopped scallions, toasted almonds and chili crisp.
