Simple Sweet Potato Quesadillas

These simple sweet potato quesadillas are quick and easy with smoky sautéed sweet potato, your choice of vegan or dairy cheese, all folded between a crispy tortilla.

Ingredients

  • 1 tbsp olive oil + more for cooking
  • 1 medium sweet potato peeled and grated
  • 1 tbsp maple syrup
  • 2 tsp smoked paprika
  • Juice from 1/2 lime
  • 1/2 cup shredded cheese dairy or vegan
  • 2 flour tortillas

Instructions

  • Heat the olive oil in a non-stick pan over medium low heat. Add the sweet potato, maple syrup, smoked paprika and a pinch of salt. Cook for about 5 minutes, or until softened. Transfer to bowl and stir in the lime juice.
  • Wipe out the pan and return to medium high heat. Add a drizzle of olive oil and place a tortilla flat in the pan. Spread the sweet potato mixture on one half followed by a sprinkle of cheese. Fold in half and cook until golden brown on both sides.
  • Repeat for the other quesadilla, adding more oil to pan if needed.
