Simple Sweet Potato Quesadillas

- 1 tbsp olive oil + more for cooking
- 1 medium sweet potato peeled and grated
- 1 tbsp maple syrup
- 2 tsp smoked paprika
- Juice from 1/2 lime
- 1/2 cup shredded cheese dairy or vegan
- 2 flour tortillas
Heat the olive oil in a non-stick pan over medium low heat. Add the sweet potato, maple syrup, smoked paprika and a pinch of salt. Cook for about 5 minutes, or until softened. Transfer to bowl and stir in the lime juice.
Wipe out the pan and return to medium high heat. Add a drizzle of olive oil and place a tortilla flat in the pan. Spread the sweet potato mixture on one half followed by a sprinkle of cheese. Fold in half and cook until golden brown on both sides.
Repeat for the other quesadilla, adding more oil to pan if needed.
