- 1/2 ripe banana mashed
- 1 cup pumpkin purée
- 1/4 cup maple syrup
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 1/2 cups milk of choice
- 1 3/4 cups rolled oats
- 1 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 cup chocolate chips plus more for topping (non-dairy if needed)
Preheat the oven to 350º F and line a greased 9x9 or 8x8-inch baking dish with parchment paper.
In a large mixing bowl, whisk together the banana, pumpkin purée, maple syrup, olive oil, apple cider vinegar, vanilla extract and pumpkin pie spice.
Add the milk, oats, baking soda, salt and chocolate chips. Mix well to combine and pour into the baking dish. Top with more chocolate chips if desired and bake for 35-40 minutes, until the edges are caramelized and the center is just set.
Let the baked oatmeal cool for at least 10 minutes before serving.
