Moroccan Lentil Burgers with Herb Smashed Avocado

The best vegan lentil burger with Morrocan spices and a quick herb smashed avocado. Easy to make, full of healthy, whole ingredients and so delicious!

Ingredients

For the Lentil Burgers

  • 1/2 small yellow onion diced
  • 2 garlic cloves coarsely chopped
  • 8 oz cremini mushrooms sliced
  • 2 tsp Ras el Hanout Moroccan spice blend
  • 2 tbsp olive oil + more for brushing
  • 1 heaping cup rolled oats
  • 1 1/4 cup cooked brown lentils*
  • 1 1/2 tbsp soy sauce
  • 1/3 cup pitted green olives
  • 4-5 sesame burger buns sliced and toasted

For the Herb Smashed Avocado

  • Flesh of 2 ripe avocados
  • 2 tbsp lemon juice
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/2 cup chopped finely chopped herbs mint, dill, parsley and/or cilantro

Instructions

  • Preheat the oven to 400° F and line a sheet pan with parchment paper.
  • Add oil to a large skillet over medium heat. When shimmering, add in the onion plus a pinch of salt and cook for 3-4 minutes or until softened. Add garlic, mushrooms, and ras al hanout. Cook for another 5-7 minutes until tender.
  • To the bowl of a food processor, add the rolled oats. Blend for about 2 minutes until the texture resembles a fine flour. Add in the cooked mushrooms/onion mixture along with the lentils, green olives and soy sauce. Pulse to combine.
  • With well oiled hands, form the mixture into about 4-5 patties. If the mixture is too sticky to handle, refridgerate for 15 minutes and try again. Place the patties on a sheet pan and brush both sides generously with oil. Bake for 12-15 minutes or until crisp and browned on the outside.
  • While the burgers bake, make the smashed avocado spread. In a bowl, mash the avocado with a fork then stir in lemon juice, olive oil, salt and chopped herbs.
  • To assemble the burgers, top each bun with one (or two!) lentil patties and a good amount of smashed avocado and more fresh herbs if desired. Serve fresh.

Notes

* To cook lentils, add 3/4 cup of dried brown lentils to a pot and cover with a couple inches of water. Bring to a boil then reduce to a simmer and cover. Cook for 30-35 minutes. I find that slightly overcooked lentils make the best burgers, so cook until the lentils are very soft.
