Honey Sesame Chickpea Lettuce Wraps

- 2 15 oz cans chickpeas, drained and rinsed
- 1 tbsp cornstarch
- 3 tbsp heat-tolerant oil
- 3 tbsp honey
- 1 garlic clove minced
- 1 1/2 tbsp soy sauce
- Juice from 1/2 lime
- 1 tsp tomato paste
- 1 tsp toasted sesame oil
- Bib lettuce cooked sushi rice and toasted sesame seeds for serving
Start by laying the rinsed chickpeas out on a few sheets of paper towel and gently patting them dry. This will help them crisp up in the pan.
Transfer the chickpeas to a bowl and toss with the cornstarch to coat.
Heat the oil in a large skillet over medium-high heat. When shimmering, add chickpeas. Cook for 10-15 minutes, stirring occasionally or until golden brown and crispy.
While the chickpeas cook, make the sauce. To a small bowl, add honey, garlic, soy sauce, lime juice, tomato paste and sesame oil.
Add the sauce to the crispy chickpeas and cook for another 2 minutes or until heated through. Serve with bibb lettuce, sushi rice and a sprinkle of sesame seeds.
