Fresh homemade corn salsa is best for this recipe. Storebought is ok too, but it's super easy to make at home if you have access to the ingredients. For a quick corn salsa, mix together 1 1/2 cups fresh corn kernals (no need to cook), 1/2 chopped red onion, 1 seeded and minced jalapeño, a small bunch of cilantro (chopped), and the juice from one lime.
