Honey BBQ Salmon Tacos with Mango Slaw

- 1 lb salmon cut into two 8 oz filets
- 1/4 cup tomato paste
- 2 tbsp honey
- 2 tbsp apple cider vinegar
- 1 tbsp soy sauce
- 1 garlic clove minced
- 2 tsp smoked paprika
- 3 cups shredded red and/or purple cabbage
- 1 small bunch cilantro chopped
- 2 ripe mangos pitted, peeled and cut into strips
- 2 tbsp lime juice
- 1/2 tsp salt
- Corn or flour tortillas for serving
Preheat the oven to 400 F
In a small bowl, whisk together the tomato paste, honey, apple cider vinegar, soy sauce, garlic and smoked paprika. Place the salmon in a resealable container and pour over the marinade. Refrigerate for at least 30 minutes and up to 2 hours.
Transfer the salmon to a sheet pan and bake for 25-28 minutes then broil for the last 5 minutes until darkened on top and no longer opaque in the center.
For the slaw, toss together the cabbage, mango, cilantro, lime juice and salt.
To serve, top warm tortillas with flaked salmon, mango slaw and a squeeze of lime juice.
