Honey BBQ Salmon Tacos with Mango Slaw

Ingredients

  • 1 lb salmon cut into two 8 oz filets
  • 1/4 cup tomato paste
  • 2 tbsp honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1 garlic clove minced
  • 2 tsp smoked paprika
  • 3 cups shredded red and/or purple cabbage
  • 1 small bunch cilantro chopped
  • 2 ripe mangos pitted, peeled and cut into strips
  • 2 tbsp lime juice
  • 1/2 tsp salt
  • Corn or flour tortillas for serving

Instructions

  • Preheat the oven to 400 F
  • In a small bowl, whisk together the tomato paste, honey, apple cider vinegar, soy sauce, garlic and smoked paprika. Place the salmon in a resealable container and pour over the marinade. Refrigerate for at least 30 minutes and up to 2 hours.
  • Transfer the salmon to a sheet pan and bake for 25-28 minutes then broil for the last 5 minutes until darkened on top and no longer opaque in the center.
  • For the slaw, toss together the cabbage, mango, cilantro, lime juice and salt. 
  • To serve, top warm tortillas with flaked salmon, mango slaw and a squeeze of lime juice.
