Grilled Pesto Chicken Wraps

These grilled pesto chicken wraps are loaded with shredded chicken, basil pesto, avocado, italian seasoning and tender artichoke hearts. Grilled until warm and crispy, perfect for a quick, delicious lunch.

Ingredients

  • 1/2 cup grated mozzarella dairy free if needed
  • 1/3 cup basil pesto store-bought or homemade
  • 1 cup shredded rotisserie chicken or leftover
  • 1/2 cup canned artichoke hearts chopped
  • 1 avocado pitted and sliced
  • 2 tsp Italian seasoning
  • 2 large flour tortillas
  • Arugula or fresh basil optional
  • Oil for grilling

Instructions

  • In the center or each tortilla, layer mozarella, basil pesto, shredded chicken, artichoke hearts and sliced avocado. Sprinkle with italian seasoning and top with a handful of arugula or fresh basil.
  • Preheat a grill pan or skillet over medium high heat. Fold the sides of the tortilla inward and roll it up like a burrito. Brush both sides with oil.
  • Grill the wraps for 4-6 minutes on each side or until golden brown and crispy. Serve warm.
