These Citrus Chicken Kebabs are marinated with a blend of fresh squeezed orange juice, spices and aromatics before being charred to perfection under the broiler (or in the airfryer!). Served over fragrant cardamom rice with a dollop of yogurt for the most delicous Middle-Eastern inspired meal.
1.25lbsbonelessskinless chicken thighs, cut into 1-inch pieces
1tsporange zest
3tbspfresh orange juiceplus more to serve
2garlic clovesminced
1 1/2tbspbrown sugar
1tbspolive oil
1tspground cumin
3/4tspturmeric
3/4tspkosher salt
Cardamom Rice:
2tspolive oil
1/4tspground cardamom
1cinnamon stick
1cupdry basmati ricerinsed well
2pitted medjool datesfinely chopped
2cupswater
1/2tspkosher salt
To serve:
Plain yogurt + a pinch of salt
Fresh mint
Chopped toasted almonds
Instructions
If using wooden skewers, soak in a glass of water for at least 15 minutes before using.
For the citrus chicken kebabs, add the chicken to a large bowl along with remaining ingredients and toss to coat. Marinate at room temperature for 15-20 minutes or up to overnight in the fridge.
For the cardamom rice, heat the olive oil over medium-low heat in a medium pot to which you have a tight-fitting lid. Add the cardamom, cinnamon stick and rice, toasting for 2-3 minutes or until fragrant. Add the dates, water and salt. Bring to a boil, reduce the heat to the lowest setting and cover. Cook for 15 minutes. Turn off the heat and leave covered for another 10 minutes.
To cook the chicken kebabs, line a baking sheet with parchment paper or aluminum foil. Turn on the broiler, and make sure one of the oven racks is about 5 inches from the heating element.
Thread the chicken pieces on to the skewers and broil for 12-15 minutes or until cooked through and the edges are lightly charred.
Serve the kebabs over cardamom rice with a squeeze of fresh orange juice, yogurt, mint sprigs and a handful of toasted almonds.
Notes
Air fryer Instructions: Preheat the air fryer to 390° F and spray the basket with cooking oil. Airfry the skewers for 12-15 min, flipping halfway, until the chicken is cooked through.
