- 1 lb Yukon gold potatoes peeled and cut into 3/4-inch cubes
- 1 small head green cabbage cut into 1-inch pieces
- 1/2 tsp kosher salt
- 12 oz smoked kielbasa sliced into coins
- 1 red apple cubed
- Freshly ground black pepper
- Fresh dill and sour cream for serving optional
Vinaigrette:
- 1 large shallot thinly sliced
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar plus more for servings
- 2 tbsp maple syrup
- 1 1/2 tbsp tbsp whole grain dijon mustard
- 1 1/2 tsp smoked paprika
Preheat the oven to 400° F and line a sheet pan with parchment paper.
Toss together the potatoes, cabbage and salt and spread in an even layer on the sheet pan. Cover tightly with aluminum foil and bake for 20-25 minutes, until the potatoes are fork tender and the cabbage has softened.
Meanwhile, stir together the vinaigrette ingredients.
Remove the foil and add the kielbasa and apple. Pour over the vinaigrette and toss to combine. Return to the oven for another 25-30 minutes until the cabbage is caramelized and the sausage and potatoes are crisp. Stir once if the edges begin to burn.
Garnish with fresh dill and serve with a splash more apple cider vinegar.
