Burger Bowls with Caramelized Onion Aioli

- 2 tbsp olive oil
- 1/2 large yellow onion finely diced
- 1 1/2 tsp brown sugar
- 1/4 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tsp apple cider vinegar
- 1/2 tsp garlic powder
- 1 lb ground beef 80-85% lean
- Kosher salt and freshly ground black pepper

- Roasted potatoes or French fries homemade or from frozen
- Sliced tomatoes
- Romaine lettuce
To make the caramelized onion aioli heat the olive oil in a skillet over medium heat. When shimmering, add the onion and a pinch of salt. Cook for 10 minutes, stirring occasionally, until softened. Add the brown sugar and cook for another 5-10 minutes or until the onions are a deep golden brown color. If at any point they start to burn or crisp up, add a splash of water to the pan. You want a jammy consistency.
Transfer the caramelized onions to a bowl and stir in the mayonnaise, Greek yogurt, apple cider vinegar and garlic powder. Season with salt and pepper to taste.
For the burgers, divide the ground beef into 5-6 pieces and shape into patties. Season both sides with salt and pepper. Wipe out the skillet and return to medium-high heat. Sear the burgers for 2-3 minutes per side or until they are cooked to your liking.
Serve the burgers over chopped romaine lettuce with sliced tomatoes, fries and dollops of caramelized onion aioli.
