Apple Flatbread with Caramelized Onions and Arugula Pesto

Crisp and crunchy flatbread topped with sweet apple slices, balsamic caramelized onions, smoked Gouda and spicy arugula pesto. Fancy, but surprisingly easy to make! Vegetarian with a vegan option.

Ingredients

  • 1 lb pizza dough homemade or store bought
  • 1/4 cup olive oil + more as needed
  • 2 large yellow onions thinly sliced
  • 1 tbsp balsamic vinegar
  • 2 tsp fresh or dried thyme
  • 3/4 tsp salt
  • 1 Koru or Snapdragon apple thinly sliced
  • 6 oz smoked Gouda vegan if needed
  • 1 tbsp honey

Arugula pesto

  • 4 cups arugula
  • 1/4 cup toasted pumpkin seeds
  • 2 tbsp lemon juice
  • 2 tbsp parmesan or nutritional yeast
  • 1/4 cup olive oil
  • 1/4 tsp salt + more to taste

Instructions

  • Preheat the oven to 475º F and grease a large baking sheet with olive oil.
  • To make the caramelized onions, heat oil in a large skillet over medium heat until shimmering. Add in the sliced onions plus a pinch of salt. Cook over medium heat, stirring every so often until deeply caramelized. About 20-25 minutes. Stir in the balsamic and thyme, cook for another three minutes and set aside until ready to use.
  • While the onions cook, make the arugula pesto. Add all ingredients to the bowl of a food processor or high speed blender, Blend to combine, scraping down the sides as you go. Taste for salt and add more as needed. Set aside until ready to use.
  • To assemble the flatbread, roll out the dough into a thin circle on a lightly floured surface. Transfer to the greased baking dish and top with smoked gouda, apple slices, and caramelized onions.
  • In a small bowl, whisk together honey with 2 tbsp water and brush over the outer crust. Bake the flatbread for 15-18 minutes or until golden brown and no longer doughy in the center. Slice and serve fresh out of the oven with dallops of arugula pesto.
