15 Minute Gochujang Gnocchi
This Korean inspired gnocchi dish is made with sweet and spicy Gochujang and served with a quick pickled cucumber salad. Easy and ready in 20 minutes or less!

For the cucumber salad
- 1 Persian cucumber thinly sliced
- 2 tbsp rice vinegar
- 2 green onions chopped
- 1/2 tsp gochujaru Korean chili flakes
- 1/2 tsp salt
For the gnocchi
- 1 lb store bought gnocchi
- 3 tbsp gochujang
- 3 tbsp lime juice
- 1 tbsp honey
- 1 tbsp soy sauce
- 1 garlic clove minced
- 1 tbsp cornstarch
- 2 tsp toasted sesame oil
In a bowl, toss cucumber with rice vinegar, green onions, gochujaru and salt. Let sit at room temperature while you prepare the gnocchi.
In a small bowl, whisk together the gochujang, lime juice, honey, soy sauce and Garlic.
Cook gnocchi according to package directions. Reserve 3/4 cup cooking liquid.
Transfer the cooked gnocchi to a skillet and pour in the gochujang sauce. Whisk together reserved cooking liquid with cornstarch to make a slurry. Add to the skillet and simmer over medium heat until thickened. Add up to 1/4 cup more liquid until desired consistency is reached. Remove from heat and stir in the toasted sesame oil.
Serve warm with cucumber salad and a sprinkle of sesame seeds.
