I think I’ve finally recovered from my Thanksgiving food coma because I’ve been craving these Cinnamon Roll Muffins…

Soft and buttery, with a gooey cinnamon sugar swirl and sweet glaze. Everything you love about a traditional cinnamon roll in a fraction of the time, you would never guess these cinnamon roll muffins are vegan and made without yeast!

Here’s what you’ll need:
- all purpose flour 
- baking powder & soda
- vegan butter (or regular)
- plain non-dairy yogurt 
- brown sugar & granulated sugar
- milk of choice
- vanilla extract 
- cinnamon

Lemon Thyme Meatballs w/ Creamy Pumpkin Orzo ✨

Juicy oven-baked meatballs with fresh herbs, lemon zest and caramelized shallots. The orzo is dairy-free, made in one pot and so unbelievably creamy. The perfect cold-weather comfort food!

Pumpkin Orzo:
3 tbsp olive oil
2 medium shallots, minced
4 garlic cloves, minced
1 cup dry orzo
2 cups low-sodium chicken stock 
1/2 cup pumpkin purée 
1/2 cup full-fat coconut milk 
1 rosemary stalk
1/2 tsp kosher salt, plus more to taste
Freshly ground black pepper 

Meatballs:
1 lb ground turkey or chicken thigh
1/4 cup bread crumbs 
1 tbsp fresh thyme leaves
Zest from 1 large lemon
1/2 tsp kosher salt

1. Preheat the oven to 400° F. 
2. Heat the olive oil in a large pot over medium heat. Once shimmering, add the shallot and garlic and sauté for 3-4 minutes, until translucent.
3. Transfer half of the shallot/garlic mixture to a large mixing bowl, leaving the rest in the pot. To the mixing bowl, add the ground meat, bread crumbs, thyme, lemon zest and salt. Mix well to combine and roll out into 10-12 golf-ball sized balls. Place the meatballs on a sheet pan and bake for 14-16 minutes or no longer pink in the center.
4. Return the pot to medium heat. Add the orzo and toast for 3-4 minutes, until golden brown.  Stir in the chicken stock, pumpkin purée, coconut milk, salt and a few grinds of black pepper. Nestle in the rosemary stock and bring to a boil. Reduce the heat to medium and simmer for 9-12 minutes, stirring occasionally, until al dente. Turn off the heat and let the orzo sit for 10 minutes to finish thickening.
5. To serve, remove the rosemary stalk from the orzo. Serve warm with a few meatballs and garnish with more fresh thyme.
